Something else is going on here, demanding that you convert in order to marry his daughter isn't really in line with Jewish tradition. I'd suggest telling him your misgivings about the conversion, and then suggesting you both meet with his Rabbi together. There is a VERY high chance that the Rabbi will side with you on this.
