I'm of the view that the older the youngest person in the relationship, the less issue there is. You've been his boss, I assume you're financially secure and independent, and so the power dynamic isn't problematic the way it can be when there's someone so much older and established.
Really, once the maturity and power dynamic issue is resolved, all that's left is the obvious stuff. You in your 20s will likely want different things to him in his 50s, and will have different stamina etc. You'll need to have a way to deal with that, but it's not a deal breaker.

PT2: I agreed and said I'm an a22hole while hugging her. Then I asked if she's still angry, she retorted no, then I asked if that was an episode and she got a little offended but agreed it was a small episode. She then started to try and explain bipolar and how she feels but I struggle to resonate. Then she started to list dating statistics for people with bipolar and how unlovable she is to which I asked “do you want to break up”? She said “if you want to we can”. I said “Well I do love you and I care about you, so no I don't want to break up”. She responded by saying “that's a dumb decision” and she hugged me really tight. Now I'm left at a logical impass, my heart quakes for her but my brain tells me that she's only gonna hurt me if I keep her around. I don't have a great understanding of bipolar so is she right? Is it impossible to love someone with bipolar? If it is possible what do I need to know to help her and succeed?
He's a lil bit vain and didn't really believe you aren't swayed by his looks. No harm no foul if he drops it and he gets a cookie if it makes him reflect on his emotions and their root.
While dealing with an emotionally volatile friend is NOT my idea of a great use of vacation time, you have to accept that your friend is in need of her friend too.
It kinda sucks, but friends look out for each other even when it's inconvenient or you will have to postpone more valuable uses of PTO that you were hoping for.
Unless you have your own honeymoon or equally significant vacation planned, of course.
