Wow! seriously starting off on the wrong foot to get $25,000+ in debt over a party….. I'd suggest you keep it to $10,000 or less and invite about 100-120 people. You can get a nice venue for $100 a plate with that budget. I'd also suggest that you avoid an “open bar.” Instead drop a credit card on the bar with a few Thousand dollar limit. Odds are in today's day and age many people drink sparingly. Hence an open bar tab for that many people may only run you 1/2 of what a venue would charge for an “open bar.”
Also, not to be the nostalgic type, but it used to be the Bride's family that paid for the wedding reception while the grooms family covered the costs of the wedding ceremony itself and the honeymoon. Sooooo maybe bring that up and say hey $35K is great, where are you and your family coming up with that kind of cash? LOL

Your girlfriend gives me vibes of how my mother was with my dad. He did so much for her (financially or otherwise), yet on the occasions where he actually felt like he needed to put his foot down and say no to something she asked of him, of course suddenly he was the worst husband in the world who never did anything for her – just someone with no concept of how the world actually works, coasting off someone else’s nude work and good nature.

Especially because she seems more stable in her career and will make way more money than any other offer (for her or fiancé). Fiance seems to not quite know what to do with his career and treats all the job like a sample platter of possibilities and if one isn't tasty then it's on to the next. All of the weird firing circumstances aren't really inspiring a lot of confidence either. Push back the wedding and take the job, it's def your turn.
