You’re 26 now, not 21. I think it would be fair to be honest if you feel like you don’t want marriage, kids etc. You’re at an age now where you need to give her a chance to let her go if she wants more than you from a relationship. If you’re unsure about marriage, tell her honestly. And don’t give her false hope about your position on marriage changing in the future.

For me it's just “Hey I know you like this so I did this” like… showing through action they know you as an individual
If it's too much, and you are without hope at this point, you can start separating and see how you feel with a month or two away from them.
If you find your life to be better without them, get the divorce. Imo, they allowed you to cut off all their gaming before. If you're truly at the point where you are done trying, I'd communicate that and boil it down to an ultimatum: games (including the videos etc) or me.
How is OP basically a kid when she’s supposedly the same age you were when you started dating your wife? But then again I’m 31 and can not imagine dating a 26 year old because there’s a lot of changes and growth that happens in those years as well. There is a massive difference between 18 and 26 or at least there really should be so I’m not sure how you’re comparing these places of life. An 18 year old is just barely an adult.
