I think relationship counselling would be necessary to get to the bottom of what happened.
I expect a partner to be a fully functional adult, with a job, a place of their own (roommates are okay in some circumstances), who is capable of managing their own life.
I would not date your girlfriend based on that criteria.

Well, cheating or not (and I would never be so quick to dismiss that possibility), she's doing something you don't like and she won't engage you about it. This isn't how partnerships are supposed to work. She's only 23, but if she's completely disregarding how you feel, then that's bad.
Have a conversation with her and tell her how you feel. Hopefully she responds with kindness and empathy and understanding. If not, then it's possible she's checked out of the marriage. Are her friends a bad influence on her? When my ex started cheating again a couple of her friends were rooting her on, not telling her to wake up.
On the contrary, that's life when you date someone who already has kids.
If you don't want to accept compromises with the other parent of your partner's children, don't date someone who has shared child custody. Unless he surprises you with the kids a year in, you know about it from the beginning and should make the decision that you can live! with.
Similarly, if you don't want to make compromises for the kids, don't date someone who already has them.
Both the parent-of-kids and kids are part of the package, known from the beginning, and not going away.
