The 5 year thing is not a good compromise. In 5 years you’ll just be even more established in Seattle. She could also change her mind at the end of the 5 years, and that would be her right, but then you may feel like you’ve wasted that time or that she’s misled you. I am in this exact situation with a housemate. It is 100% OCD.
Please try to get her help because this is the tip of the iceberg of this mental health issue. If you pay attention, you'll probably notice other germaphobic overcleaning in other areas of her personal hygiene or housekeeping.
Also get a bidet in the meantime, and buy toilet paper that degrades better. In my experience Scott and Trader Joe's clog the least, Charmin is bad and Cottonelle is the absolute worst. Trust me, I've been dealing with this for over 3 years.
