If you are not exclusive, and he doesn't have an issue with going out with other women then I don't think you need to apologise tbh.
Male perspective here, from someone about his age. I think you are both right to a degree in your arguments. Missing out on experiences that don't come often in life sucks, and you are being offered something not many get to do, travel to very different places for free for work.
So I get your point of view, if you choose not to go, in order to make him happy and keep the relationship, then you will likely develop a level of resentment towards him and that may ultimately drive a wedge between you anyway, even if you do stay.
From his point of view, I also understand. He has a young, and beautiful girlfriend – on account of you being a model – so he would want to protect the relationship by not having you be alone at events etc. We know what men are like, after all. You would get approached often in those scenarios
This is the thing about the age difference in relationships as well, at your ages you might both be mature but you are in different stages of your lives. You want to be able to experience life a little bit, and the fruits of your modelling work – which I assume has an expiry date on it, in terms of opportunities. He wants to not lose you, and you not going on that trip is a way of him protecting the relationship – that's how he sees it, I guess.
The thing he was really unfair about is that he called you a child who didn't know what she wants from life. Most people don't have life figured out at 23, especially men, so it's not the most productive thing to say.
You may try to have the best of both worlds, by carrying on the relationship on a long distance basis, during those 5 months. This kind of relationship can work, if there is a definitive end to when you will be apart, which seems to be 5 months for you. You've not mentioned where you are from so I will assume it's the US. Timezone difference will be a big factor here, minimum 6 hours with Milan and a lot more with Seoul. So that may make the distance aspect tricker to navigate and put you two off the idea of that.
I guess there is no right or wrong answer here. Just you need to see what works for you, after weighing it all up
