I never blackout from drink but I do know the alcohol is stronger on holidays and it doesnt help when I drink so much of it. He only would work the nights from 2-8am and all the other workers wouldnt be there in these hours so I think he was security/bar man

It could have many reasons. From my expierence and how it sounds it's that he needs also some alone time and time for his friends because of his work. You both just started, it's not that things are super serious, at least usually not and from what it sounds for him.
I would chill down a bit, give him a few days without trying to make plans and then see what he says
