I’m not sure how the dynamic works at home, but I think it’s time you have a long and very hot talk about this together with a doctor. Like even if it makes him upset, you just gotta make him go through that hard conversation. Maybe even consider talking to a therapist about this because it definitely sounds like he’s using binge eating as a coping mechanism.
This is complex, because based on comments, he doesn't seem entirely stable himself, but you are the better judge than any of us would be. About the only thing I think you can do is to indicate you are taking a break from the family as well, and you would like to discuss things again with him in a few weeks and maybe together set boundaries.
Again, I don't know if in balance things are worth it, but maybe he would be swayed by your willingness to set and keep some of those boundaries.
They are young. Elementary school and younger.
